Run with Rach: Quick Paleo Pancakes

So I can make them this weekend.

runwithrach:

  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond butter
  • 1/4 tsp vanilla
  • sprinkle of cinnamon

Cook like you would any kind of pancake. The batter is a little thin, so the key is to keep the cakes small (3 inches) and ”roll” the cake instead of flipping it. This will make 6-8 3 inch…
